2x fluffy pumpkin fritters (drop scones).

*Spicy pumpkin drop scones*

Shopping list:
-fresh, grated pumpkin (1 cup)
-1 egg
-herbs (e.g.chopped basil)
-salt and pepper (pinch of both)
-fresh, chopped chilli or chilli spice
-breadcrumbs (half of a cup)
-flour (3 tablespoons)
-olive oil
-water 25 ml


Mix grated pumpkin and water and cook it for a few minutes (till warm) in a small skillet. You can bring it to the boil, if you like. Mix all the ingredients (except olive oil and water) in a large bowl. Using your hand, form small round scones. If your mix isn't sticky enough, you can always add more flour. Heat 4 tablespoons of olive oil in the pan. Fry for 3-4 minutes on each side (till golden brown).

*Sweet & sour fluffy pumpkin drop scones*

shopping list:
-small sized pumpkin
-0,5 l of sour yogurt
-2 medium range eggs
-flour (2 cups)
-baking soda (1 teaspoon)
-2 apples
-olive oil
- water (25-50 ml)

Cut pumpkin in half, remove seeds and strings, remove skin (you can find a clever tip how to do that here). Sprinkle botom of the saucepan with water. Cut pumpkin into cubes and cook till very tender (overdone). You can add more water if necessary. Now mix 2 cups/mugs of overcooked pumpkin, sour yogurt, eggs, flour, apples (cut into small cubes), baking soda in a large bowl. Heat a bit of olive oil in the pan. Using a tablespoon pour the mix onto the hot pan and form small, round-shaped drop scones. Leave 1 cm space between each scone. Fry about 2 minutes on each side (till golden brown). ENJOY!
