Pumpkin pie and pumpkin cake recipes

Classic Pumpkin Pie and Pumpkin Cake. Delicious fall recipes! Part of ‘Little Things Fall & Halloween series.


*Pumpkin pie*



Shopping list:
- pumpkin pie spice (recipe),(1 Tblsp)
- pumpkin puree( fresh or canned- 2 cups)
- 1 unbaked or partly baked pie shell
- evaporated milk (around 50ml )
- greated ginger (2 teaspoons)
- water ( around 50ml)
- lemon juice (50 ml)
- 2 eggs
- 3/4 sugar cup
- salt (1tblsp)
- butter (2 tblsps)


Mash pumpkin puree, water, lemon juice, ginger.
Bring to the boil, reduce the heat and simmer for 5-10 minutes.
Add eggs, sugar, evaporated milk, pumpkin spice, butter, salt. Mix it (you can use electric mixer).
Pour your mix into the pie shell. Bake in preheated oven (160 °C) for 40 minutes-1 hr.


*Pumpkin cake*



Shopping list:

- pumpkin pie spice (recipe),(1 Tblsp)
- pumpkin puree( fresh or canned- 2 cups)
- sugar (1 cup)
- 3 eggs
- baking powder (1 teaspoon)
- baking soda (1 teaspoon)
- icing powder sugar (1 Tbls)
- flour (2 cups)
- Oil (1 cup)
- baking parchment
- brown sugar icing (optional, recipe)
- vanilla sugar (optional)

Beat eggs and sugar until your mix is fluffy (you can use electric mixer).
Add eggs, pumpkin spice, baking powder, baking soda, icing sugar, flour ,oil.
Mix it. Add pumpkin.Mix it again.
Line the base of your tin with  baking parchment to prevent the dough from sticking.
Pour your mix into the tin.
Bake around 50 minutes at 180°C (160°C for fan assisted ovens).
You can spread the brown sugar icing on the cake or sprinkle it with vanilla sugar.
